Beef cooked in canned tomatos; carrots cooked in butter; brown rice – 2 January 2011

Mom – still visiting her for a few more days – cooked slabs of beef in canned tomates that she likes. You can cook a really tough cut of meat this way – the tastiest and cheapest kind – and it turns out well.

She also cooked carrot slices, slowly over lowish heat, and they were delicious. I really love her cooked carrots. I believe that is brown rice, rather than leftover pilaf, with meat sauce on it. And I don’t see a lettuce salad, so I’m betting the cole slaw was being passed as I took the photo 🙂 Oh, no, no – I see the beets there. She served a jar of pickled beets to have a change. They are quite tasty.
